This is now possible on the latest version of iOS – so we have implemented that in Hindenburg Field Recorder.

Info: The built-in microphones on iOS devices do only support 44.1 kHz, 16 bit, so adding a 48 kHz option would be no different than just selecting 48 kHz conversion on export.
